These bacteria convert milk sugar, aka lactose, into lactic acid, which causes the milk to coagulate to form yogurt. Milk and bacterial cultures are the only two ingredients required to make yogurt. However, you’ll rarely find yogurts in grocery stores with such a short list of ingredients.
