Easy as a pie !
- Mix the starter, flour, and warm water, then let it rest covered in a warm place for 18–20 hours until it rises and develops a pleasant aroma. You can store it in the refrigerator for up to 7 days or use alternative flours for a tangier flavor.
- Mix the sponge with flour, water, salt, and yeast to form a rough dough, let it rest for 20–30 minutes, then knead until smooth and elastic. Place the dough in a greased bowl, let it rise for 2–3 hours, deflating and folding it gently after 1 and 2 hours.
- Divide the dough into two portions, shape them, and let them rest for 20 minutes. Place the loaves in a proofing basket or on a baking sheet, cover, and let rise for 2+ hours until almost doubled in size.
- Preheat the oven to 246°C (475°F) and prepare a baking stone or steel for a crisp crust. Score the loaves, bake at 232°C (450°F) for 18–25 minutes, and let cool for an hour before slicing.
